This easy dinner idea is a tasty, everyday favorite for us. My boys love anything with chicken, making this hearty meal a winner for all of us. I love how simple and quick it is to make, and they love eating it. Win, win!

Classic mac and cheese meet Frank’s red hot sauce and chicken for a cheesy, creamy spin off a traditional mainstay with this buffalo chicken mac and cheese recipe. You’ll love the spicy, made from scratch kick!

We start with tender macaroni noodles and a little hot sauce on the chicken. Add a little homemade cheese sauce (no Velveeta here!) and this delicious dinner is ready in no time for the masses to devour.

Buffalo Chicken Mac and Cheese Ingredients you will need:

  • 2 cups shredded chicken
  • 1/3 cup buffalo sauce (or to taste)
  • 16 oz macaroni pasta
  • 1/4 cup butter
  • 2 T flour
  • 2.5 cups milk
  • 8oz sharp cheddar, freshly grated
  • 6oz Monterey Jack, freshly shredded
  • Salt and pepper, to taste
  • 1/2 cup blue cheese
  • Parsley, freshly chopped

How to Make Buffalo Chicken Mac and Cheese

Start by cooking the macaroni according to package directions.

While you wait for the macaroni to cook, pour 1/3 cup of buffalo sauce on top of shredded chicken and mix well.

When macaroni is done cooking, drain and in the same pot, over medium heat, melt butter and whisk in flour. You’ll cook for about one minute, stirring constantly.

Add in milk, cheddar, and Monterey Jack cheese. Stir frequently until cheese has completely melted into a sauce. Add salt and pepper to taste.

Combine the cooked macaroni and shredded chicken in the pan with the sauce.

Serve warm topped with freshly chopped parsley and blue cheese crumbles. I love to add celery sticks to the side as well.
