This amazing casserole offers the very best taste and will leave your family requesting seconds and thirds.

Hamburger Casserole Ingredients you will need:

  • 8 oz (4 cups dry) egg noodles, cooked
  • 1 pound lean ground beef
  • 1 cup diced onion
  • 1 cup diced green pepper
  • 1 tsp garlic
  • 1 tsp Italian Seasoning
  • 8oz can tomato sauce
  • 14oz can diced Italian style tomatoes
  • 1/2 cup frozen peas and carrots
  • 1/4 cup frozen corn
  • 2 cups shredded cheddar jack cheese, divided
  • Salt and pepper

I know there are a lot of popular options for hamburger casserole recipes, but I happen to think this is the ultimate winner.

Some recipes call potatoes, tater tots or hash browns or rice. I like that this recipe offers tasty noodles instead.

There are plenty of vegetables inside as well, which I think gives it a great substance. We’re skipping the cream cheese, tomato soup, and cream of mushroom soup with this recipe, too.

You could also make this low-carb or keto friendly by omitting the noodles if that’s your thing.

Start by preheating your oven to 375 degrees. Spray a 13×9 baking dish with cooking spray. You don’t want all this goodness sticking to your pan!

Next, in a medium skillet, cook the ground beef until it is almost done, breaking it up with a wooden spoon as you go.

Add the onion and green pepper to the skillet and cook about four minutes, then add the garlic and Italian seasoning and cook for one minute more.

Pour the tomato sauce and diced tomatoes into the skillet and cook together for a few minutes, stirring frequently.

Put the egg noodles in the bottom of the baking dish, then pour the ground beef mixture on top. Add in the peas, carrots, and half of the cheese. Mix everything together thoroughly.

How to Bake

Top with remaining cheese and bake for 25 minutes in the oven, until the cheese is melted and the casserole is heated through.

Serve warm, garnished with fresh parsley if desired.

I feel like this is such a filling and wholesome meal all on its own. You could also serve with biscuits or rolls and a salad if you’d like. It’s a perfect dinner for any night of the week or to serve special guests.
