Rotel dip is an easy dip recipe made with meat, cheese, and Rotel Tomatoes — which are petite, diced tomatoes with green chilis and spices. It’s almost like salsa!

It’s so quick and simple to make homemade. It’s one of our favorite appetizers because of how cheesy it is. It’s loaded with the perfect amount of spicy heat in each bite. It’s ready in only a few minutes with just three ingredients.

Rotel Dip Ingredients you will need:

  • 16 ounces Velveeta
  • 10 ounce can Rotel
  • 1 pound hamburger

We’re using three ingredients for today’s version.

You can make it with cream cheese to be extra creamy, with meat, turkey or with chicken. I’ve had friends make it with shrimp or with sausage. Today we’re using ground beef. If you use spicy sausage, it takes the heat up another level, which some families love.

If you’re going to tailgate, you could use your crockpot to keep this dip warm. I love my slow cooker for game day because it means we can snack on warm food all afternoon.

No matter what you use to make this Rotel cheese dip, I think you’re going to love it.

How to Make Rotel Dip

This ultimate appetizer couldn’t get any easier to make.

Start by browning your hamburger in a skillet until cooked through.

As it’s cooking, cube the Velveeta cheese.

Once the meat is thoroughly cooked, stir in the cubes of Velveeta cheese and the Rotel.

Stir regularly as it melts and then it’s ready to serve.
