Back to school is right around the corner for our family. This means lunchboxes will soon be part of our daily routine again.

As my boys get a little older, packing their lunch has become more of a family project instead of a mom solo show. The guys love to help and choose what goes in their lunch — and mama isn’t ever going to say no to their help. ?

This delicious, cheesy and fun recipe is great for an appetizer, light meal, or a quick after-school snack — not to mention an ideal contribution to lunch!

The toppings can be customized, so each batch can be personal, based on your kid’s preferences.

My boys love traditional pepperoni, but they also love adding bacon, sausage, and peppers. My oldest loves BBQ chicken, so sometimes I’ll make these for him with barbecue sauce and shredded chicken.

No matter the toppings, I’m confident your kids will think they’re the best and rave about the award-winning flavor.

Ingredients for Pizza Muffins

You’ll be amazed how easy it is to bake these from scratch. Let’s gather supplies:

  • 2 cups flour
  • 2 tsp garlic salt
  • 2 tsp onion powder
  • 1 tsp oregano
  • 2 tsp baking powder
  • 1/4 cup grated Parmesan
  • 2 cups whole milk
  • 2 large eggs
  • 2 tbsps salted butter, melted
  • 1 package mini pepperoni, divided
  • 1 cup shredded cheddar
  • 12 tsp pizza sauce

Start by preheating your oven to 375? Fahrenheit.

Then, chop 3/4 of the mini pepperoni into 1/4? pieces and set aside.

Combine the flour, garlic salt, onion powder, oregano, baking powder, and grated Parmesan cheese in a large mixing bowl.

Next, add the milk, egg, melted butter, and half the package of chopped pepperoni to the batter and stir to combine. Note that the batter will be runny!

Then, spray a regular sized 6-serving muffin tin with cooking spray. You can easily double the recipe for a 12-muffin tin.

Fill the bottom of the muffin pan 1/4 of the way full with batter, then sprinkle 1 tbsp of shredded cheddar cheese in the middle.

Add more batter on top of the cheese, filling it only about 3/4 of the way full.

Add a dollop of pizza sauce on the top, sprinkle with more cheddar, and add mini pepperoni — press ingredients down into batter just a bit. When baking, the muffins will form into a dome, so you want to be careful to not overfill or you’ll have a mess on your hands.

How to Bake Pizza Muffins

Bake at 375? Fahrenheit for 20-22 minutes, depending on how hot your oven runs.

Let the muffins rest in the muffin tin for 5 minutes before removing.

You can serve with more pizza sauce for dipping or ranch. The pizza muffins are easy to pull apart, making them great for any age to enjoy. You can even bake them for toddlers.

Can You Freeze Pizza Muffins?

Beyond the amazing taste, I love how easy this recipe is. Since I can make them ahead, it’s ideal for those busy days that always come during the school year.

Once the pizza muffins are baked and cooled, you can store in an airtight freezer-safe container until you’re ready to serve.
